Job Description
Leads daily culinary planning meetings. Attends weekly dining managers’ meetings.
Assists Executive Chef in training new associates and mentoring all production associates. Answers, advises, or asks questions, and solves problems presented by other production associates.
Quality checks all completed production; tastes all menu items, ensuring that they meet standards for appearance, texture, taste, temperature, and overall quality. Is proactive in making corrections to production, plating and presentation done by other production associates.
Provides storekeeper with a “prep and pull sheet” assuring frozen items are in facility and pulled from the freezer at least 48 hours in advance of serving time.
Prepares forecasted amounts of each menu item assigned, as identified on production sheets. Follows recipes accurately. Assists Executive Chef in ensuring that all production associates meet standards, and that production is coordinated for meal service.
Assists Executive Chef in menu planning, ordering & inventory, planning special events & catering, and other operational tasks.
